3 Healthy Recipes for Cutting Carbs

Low-Carb Breakfast or Lunch

Among many healthy recipes for a low carb breakfast are veggie frittatas. This is made with asparagus, but you can substitute your favorite vegetable, as well. Heat olive oil in an oven-safe frying pan. Sauté one small onion until soft, add asparagus and cook until almost tender.  Add scrambled eggs and cook until nearly set. Sprinkle cheese over the eggs and broil until melted and browned.

Low-Carb Lunch or Dinner

A healthy recipe for cutting carbs is for a beef/vegetable soup. This is good for dinner or to take to work for lunch. You can use any leftover beef and cut into chunks. Chop celery, onion, red peppers, zucchini, green beans, mushrooms or other favorite vegetables with 5-6 cups of beef or chicken broth and herbs: bay leaves, thyme, garlic and red pepper flakes. Add 2 tablespoons of tomato paste. You can also add dry red wine and low sodium soy sauce. Simmer until the veggies are tender.

Low-Carb Dessert 

One of many healthy recipes for a low-carb dessert is raspberry chiffon squares. Dissolve 1 small package of sugar free raspberry Jello in boiling water.  When it cools, add ¼ teaspoon orange extract and 3 packages of softened low-fat cream cheese and blend. Add a cup of raspberries. For crust, process 1 cup pecans in food processor. Add 2 tablespoons of butter, dash salt, and a ¼ cup sugar substitute. Press into a 9×9 pan and bake for 8-11 minutes. Pour Jello into crust and cool in fridge for 10-20 minutes. Sprinkle ½ cup raspberries over the top.
