A Melt in the Mouth Pot Roast Recipe You’ll Love

Pot roast is one of those family favorites that is great any time of year.  Finding the right pot roast recipe can be easy, and we are here to make it even simpler.  This great pot roast recipe takes only a short time to prepare and only a couple of hours to cook while offering that delectable ‘melt in the mouth’ flavor that everyone loves.

 

For this recipe, you will need:

 

A 3 pound shoulder pot roast
1 tablespoon cooking oil
One can beef broth OR one sachet of Lipton’s Onion Soup and Dip Mix (trust us!)
1 tablespoon shredded lemon peel
2 teaspoons crushed dried oregano
2 cloves minced garlic
½ teaspoon salt
¼ teaspoon pepper
7 medium carrots peeled and cut into 1 ½ inch chunks
1 wedged onion
1 cup halved, pitted prunes
½ cup halved dried apricots
1/3 cup cold water
¼ cup all-purpose flour
3 1/2 cups hot cooked noodles

 

To make this recipe, start by trimming the excess fat from the meat.  Then brown your meat on all sides in a 6 quart Dutch oven.  Add in your broth (or 1 pint of hot water and Lipton’s onion soup/ dip mix), oregano, pepper, salts, garlic, and lemon peel.  Bring the recipe mixture to boiling and reduce the heat, then cover and simmer for 1 ½ hours.  Lean meat takes longer to cook than fatty meat, so if you’ve selected a cut without much visible fat or ‘marbling’, then increase your cooking time.  Very lean meat can take up to 3-4 hours to reach the correct ‘fall apart’ moist consistency – cut off a small piece every hour to check for done-ness.

 

When the simmer is done, add in your carrots, plums, onion, and apricots and return the recipe to a boil.  Reduce heat and simmer covered for 30 more minutes or until the veggies are tender.  The longer you boil the meat the softer and juicer it will get, so don;t worry about over-cooking the meat is it’s not possible to do so.

 

When everything is cooked, transfer the meat veggies and fruit to a platter, and ensure that you have 2 ½ cups of juices left in the pan.  Add extra hot water if necessary.  Stir your cold water and flour together and stir into the juice.  Cook until thickened and then boil for one more minute.  Serve with your meat, veggies, fruit, and noodles.
