Breakfast Recipes: How to Make Swiss Bircher Muesli

If you want to eat healthily and are tired of the rows of sugar-coated cereals that line every shelf in the supermarket, you should try Muesli.  This is the staple breakfast cereal in many European countries, including Switzerland and England.  Muesli is a delicious blend of oats, crushed grains, nuts, and dried fruit.  It is available in most health food stores, and is well worth paying a few extra bucks to get a cereal with no added sugar.

 

The Swiss use Muesli to make a creamy, healthy breakfast concoction called Bircher Muesli.  While the name may sound like a cat sneezing, the cereal tastes very good and can be enjoyed hot or cold.

To make Bircher Muesli, you will need:

 

Half a bowl of Swiss Muesli (substitute grain mix if unavailable)

1 heaped tablespoon of rolled oats, soaked overnight in water

Half a pint of vanilla yogurt

1 tablespoon whipping cream

1 tablespoon honey

1 tablespoon lemon juice

1 apple

 

Additional toppings – optional:

 

Handful of blackberries

Thinly sliced strawberries

Blueberries

Raspberries

Raisins

Sliced almonds (untoasted)

 

Steps:

 

First, add the vanilla yogurt, whipping cream, honey and lemon juice together in a medium mixing bowl.  Stir well with a wooden spoon or spatula until the flavors are blended together.  Next, add your Muesli and soaked oats.  Now you can fold it into the mix.

 

When you are ready to serve your Bircher Muesli, add the apple.  Core your apple, quarter it and grate it into the mix.  NOTE:  Don’t do this until right before serving, as the grated apple will quickly go brown if left uneaten for longer than 20 minutes.

 

As a topping, sprinkle a handful of fresh berries, figs, sliced almonds and raisins over the mix.  Garnish with sliced strawberries for a professional touch.  Enjoy!
