How to Make Easy Cheesy Broccoli Soup

Making broccoli cheese soup to keep you warm on a cold winter night is simple and easy, especially when you feel like avoiding expensive restaurants and staying at home.  It’s a great, healthy homemade soup, with a lot of nutrients and texture.  So cozy up with a blanket and your favorite movie rental, this soup is sure to set the mood!

 

Ingredients:

 

1 pound of fresh broccoli

1 cup of chicken broth

1 cup of water

1 pound of American cheese

4 slices of bacon

Half a medium onion

Half a red bell pepper

A pint of half and half milk

Half a cup of cornstarch

1 cup of cold water

¾ teaspoon of salt

½ teaspoon of pepper.

 

Steps:

 

To make your soup, you need to add about an inch of water to the bottom of a pot and steam your broccoli.  Steam it for about eight minutes, or until tender.  Chop it into small pieces.

 

For your soup, you’ll need to add the chicken broth, a cup of water and the cheese to a microwave-safe bowl.  Heat this on medium until the cheese for the soup is melted.  

 

Fry your bacon and drain it, but keep a tablespoon of the grease for the soup.

 

Now, you need to sauté your onion and bell pepper in the bacon grease, then add the cheese mixture.  You need to add your broccoli to your soup now, and then the half and half milk.  Put the pot back on the stove on medium heat and add the cornstarch and the cold water (mixed together prior to this).

 

Heat your soup until it begins to thicken, stirring constantly.  Be sure to season and let cool before tasting.  Serve with homemade bread or a baguette, and enjoy it inside in the warm while it rains outside.
