How to Make Honey Curried Chicken

If you love chicken and honey, you’re in for a treat with this recipe.  Imagine succulent, fall-off-the-bone chicken infused with the sweetness of warm honey – what could taste better on a cold day? 

 

This recipe can be made in the oven or in the Crock-pot, and if you choose the Crock-pot option, you can leave it cooking all day and be greeted with the sweet, fragrant smell of honey chicken when you walk in the door from work.  Delicious!

 

To make this honey curried chicken, you will need:

 

4-6 chicken thighs (bone in, skin on)

1 stick of butter

A quarter cup of honey

2 tablespoons of Dijon mustard

Half a teaspoon of salt

Half a teaspoon of curry powder

 

Steps:

 

Melt the butter in a large, ovenproof cooking pot.  Sprinkle in the curry powder and bring the butter to a light boil, making sure that is doesn’t boil so much that it evaporates.  Add the honey and mustard, and mix well to combine the ingredients.

 

Next, wash and dry your chicken joints.  Sprinkle skin with the salt.  Remove any visible fat, but leave the skin on.  Coat the chicken thighs in the honey-butter mixture, making sure to coat all sides.

 

Preheat your oven to 375 degrees.  Arrange your chicken thighs inside the cooking pot, cover the pot with foil or the pot’s lid, and oven bake for one hour, removing foil or lid 10 minutes before the end to brown the chicken.

 

Serve on a bed of white rice, with fresh green vegetables, such as freshly podded peas or snap beans (green beans) from your supermarket‘s produce section.  Very healthy!
