Everyone today seems to want to eat healthier, and a great way to do that is to add some vegetarian food to your weekly menu. If you love tomatoes, you may want to try ricotta-basil stuffed tomatoes. You don’t have to be vegetarian to enjoy this dish.
This vegetarian dish is easy to make, and can serve a large family.
You will need:
2 eggs
8 large tomatoes
One-fourth a cup of chopped red onion
One-fourth a cup of chopped basil
1 cup of ricotta cheese (low fat)
1 clove of minced garlic
1 cup of corn (from a can)
1 cup of diced zucchini
Parmesan cheese.
Steps:
While preparing this dish, first heat your oven to 350 degrees.
Carefully slice off the tops of the tomatoes and use a spoon to remove the center. You want to have something resembling a bowl when you are done. Keep the insides for later.
Stir the eggs and the ricotta in a bowl until the mixture is smooth, and then add the onion, basil, garlic, two tablespoons of Parmesan cheese, corn, zucchini, and the removed tomato pulp. Stir until it is well-mixed.
Take each of your tomato shells and fill it with the mixture. You can add a dash of Parmesan to the top of the stuffed tomato if you would like. You could also add a couple of slices of zucchini to the top of the tomatoes before you bake them.
Bake the tomatoes for about 45 minutes, or until the tops are nicely browned.
Being a vegetarian doesn’t mean that you have to have boring meals. These ricotta-basil stuffed tomatoes prove that vegetarian cuisine is great, and tastes even better than many meals with meat!
