How to Make Rigatoni Puttanesca With Vegetarian Meatballs

If you have a craving for vegetarian food that is packed with flavor, making rigatoni puttanesca with vegetarian meatballs is an excellent choice.  You’ll find that this delightful dish is quite flavorful, and very easy to make.

 

First, you’ll need your vegetarian meatball and pasta ingredients from your grocery store.  You will need four ounces of rigatoni pasta, as well as seven ounces of soy sausage substitute.  You will also need a half-cup of breadcrumbs, two tablespoons of grated Parmesan cheese, a tablespoon of chopped parsley, two tablespoons of chopped basil, divided, two cloves, minced, a quarter teaspoon of black pepper, a cup of tomato sauce, and two tablespoons of black olives.

 

To start your vegetarian dish, cook the pasta for eight to ten minutes in boiling water.  While that is cooking, combine the sausage with the breadcrumbs to make your meatballs, and add the Parmesan cheese, basil, garlic, parsley, and pepper together.

 

Next, heat an oil-coated frying pan over medium high heat.  Roll your vegetarian meatball mix into twelve balls, and then cook them in the pan for about five minutes.  When your vegetarian meatballs are browned, add the tomato sauce, the rest of the garlic and basil to the mix, and simmer for about three more minutes.

 

Finally, drain your pasta and add it to the vegetarian meatball and sauce mixture.  Serve your dish warm.  You can also garnish your dish with grated Parmesan cheese for more flavor.
