If you love Chinese food, you’ll want to learn to cook your own special fried rice. Whether eaten by itself as a snack, or as part of a main meal, special fried rice made at home is a treat that tastes better than many Chinese restaurants.
To make it, you will need:
2 cups white rice
2 large eggs
Cooking spray (PAM, or similar)
1 tablespoon butter
Soy sauce
Frozen or fresh peas
Frozen or fresh shrimps (cleaned and prepared)
Red and yellow peppers (finely diced)
Steps:
Cook your white rice in a saucepan or rice cooker until fully cooked. Fluff it up with a fork and remove from the heat. Put into the fridge to chill for at least 30 minutes until cold.
Next, coat a large saucepan or wok with cooking spray. Fry your 2 eggs over a medium heat until cooked, stirring them with a plastic spatula as they cook to scramble them.
In a separate saucepan, fry the shrimp and cook for 3-5 minutes until cooked thoroughly. Add diced red and yellow peppers, and fry for 1-2 minutes until it is tender. Set both items aside.
Remove chilled rice from fridge and add to the egg mixture. Cook over a medium/ low heat, stirring lightly. Add your butter and soy sauce to taste.
In a small saucepan, boil the peas for 2 minutes (frozen) or 4 minutes (fresh) until cooked. Strain off the water, and add to your mix. Now, fold it into the mixture.
Add your cooked shrimp and peppers, mix everything lightly together. Do not stir too much or you’ll make everything sticky. Serve immediately.
