How to Use Up Thanksgiving Leftovers by Making Turkey Stir Fry

Are your Thanksgiving turkey leftovers cluttering up your fridge?  If you’ve tried everything you can think of to get that Thanksgiving turkey out of your life, then you might just be ready for a little turkey stir fry.  This Asian food offers some wonderful flavors, and is easy to make with a good recipe.

 

You will need some ingredients to get started.  First, you need a tablespoon of cornstarch.  You also need a tablespoon of sugar; a cup of chicken broth; a quarter cup of soy sauce; two tablespoons of cider vinegar; a quarter teaspoon of cayenne pepper; three broccoli florets; two tablespoons of water, and a pound of turkey in small pieces. 

 

You also need a medium sweet red pepper; a garlic clove, minced; a teaspoon of ginger root; two green onions, sliced; two teaspoons of dry roasted peanuts and hot cooked rice.

 

Combine your cornstarch, sugar, chicken broth, soy sauce, vinegar, and cayenne pepper in a bowl and set aside.  In a skillet, stir fry your Thanksgiving turkey in hot oil.  This should take about two or three minutes.  Add your sweet pepper, your broccoli, ginger and garlic now.  Continue stir frying for another three minutes or so.

 

Add your broth mixture to your Thanksgiving turkey and stir.  Bring it to a boil and cook for another two minutes, until it thickens.  Sprinkle your onions and peanuts over it and serve with the hot rice.  Your Thanksgiving turkey will go down faster than you think with this great dish!
