Three Great Winter Family Meals

When winter comes around, finding the best way to keep your family warm and fed can be a challenge.  One of the most enjoyable things about the season, however, is its wonderful ability to bring everyone in the house together at mealtime, as the delicious smells of cooking drift through the house.  Today, we will look at three easy and simple meals that will provide your family with warmth, comfort, and satisfaction.

Chicken Pot Pie
This is a traditional dish, but it is still a winter family favorite.  It can be very simple to make as well.  You can make an easy pot pie by boiling chicken until it is cooked and piling it inside a pie crust with two cans of mixed vegetables and a can of cream of chicken soup.  Put the top of the pie shell on, slit the top open several times with a blunt knife, and bake at 350 until the crust is golden brown. Delicious!

Grilled Cheese Sandwiches
The grilled cheese sandwich is one of the simplest family dishes in the world to make, and yet it is a long time favorite.  Everyone in the family loves these tasty and extremely filling sandwiches. All you need to do is put a couple of slices of cheese between two slices of buttered bread and cook the lot in a skillet.  Flip over when each side is done, and spray skillet with oil for a crusty brown finish to the sandwich.  Adding tomatoes to the sandwich can make it healthier and more flavorful, and ham is another popular addition.

French Panini

The French version of the grilled cheese sandwich is called a Panini, and is made using a long French bread roll of ciabatta, pressed in a sandwich-grilling press.  Ham and cheese are the most popular combinations, but if you want to be a little fancy, try a slice of Brie (soft cheese) along with a slice of smoked black forest ham.  Thin-sliced beef with grilled caramelized onions and sliced mushrooms is the more filling ‘lunch’ version.  You can buy toasted cheese sandwich makers from any kitchen store if you family loves paninis.

Macaroni and Cheese
This last dish is another family favorite.  While the boxed kind is easiest to make, you can make your own with little effort.  Cook some macaroni in a pot until it is almost done, then melt your favorite cheeses together in a saucepan, and combine the two.  Stir well, cover in a casserole dish with bread crumbs, and bake until the pasta is finished.

These dishes are easy and comforting, and are a great way to keep your family warm this winter on a budget.
