Turkey and Scalloped Potatoes are a Great Way to Use Thanksgiving Turkey

Turkey and scalloped potatoes can be an excellent option if you need to rid yourself of some leftover Thanksgiving Day food.  This simple, easy recipe tastes great, and can actually be made in numerous different ways. 

 

These are two family favorites – Thanksgiving turkey and potatoes – and can be used as a side dish or even be an entire meal.

 

One of the simplest options is to use boxed scalloped potatoes and leftover Thanksgiving turkey.  Follow the directions on the box of scalloped potatoes, which can be bought at any supermarket.  While the potatoes are cooking, warm your turkey in a frying pan.  Add some butter to keep it from sticking to the pan.  When the potatoes are done and the turkey is warm, add the turkey to the potatoes and serve hot.

 

Another option is to serve your Thanksgiving turkey leftovers and scalloped potatoes separate.  You might opt for a turkey sandwich with scalloped potatoes as a side dish.  One great option is actually to combine both of these into a casserole.  To do this, follow the directions on the scalloped potatoes box for oven preparation.  Add your Thanksgiving turkey to the dish and place in the oven.

 

You can garnish this casserole with different toppings – breadcrumbs and shredded cheese are nice options, but you can also use healthier vegetables like peas to complete this.  Your family will love the dish and will not balk at eating Thanksgiving leftovers any longer.
