A Tasty and Comforting Carrot Soup Recipe

For this carrot soup, you will need:

16 large carrots with the ends chopped off.  Peeled if desired.
8 tablespoons unsalted butter
1 cup off dry white wine
½ cup sour cream
A dash of salt and pepper
1 cup water
Truffle oil
Toasted sunflower seeds
Red pepper paste

 

To start this carrot soup, peel the carrots if desired, then chop.  Cook the carrots in butter in a hot saucepan and add salt and pepper to taste.  Add water to just cover the carrots.  Stirring every minute, cook the carrots on medium-high heat for about fifteen minutes and add in your wine. 

 

Cover the pan and boil the liquid off of the carrot soup mixture, which should take about five minutes, then use a slotted spoon to put the carrots into your blender while draining the butter.  Add in your sour cream and water and blend.  If the soup is too thick, feel free to add water until it is the desired consistency. 

 

Pour the soup into bowls and use the truffle oil, red pepper pate, and sunflower seeds as garnish.  Serve and enjoy.
