How to Make Homemade Fortune Cookies

The fun of a fortune cookie doesn’t have to be limited to your occasional visits to Chinese restaurants.  You can create a one of a kind fortune cookie to place on each plate at a family dinner party. Here’s how.


Creating your ‘Fortunes’

 

To begin with, you should print various fortunes from your computer.  You can also make handwritten ones if you prefer something a little more intimate.  They should be about 1/2 inch wide by 2 inches long.  The fun thing about coming up with your own fortunes is that each cookie can have personalized sentiments for each guest.

 

After you’ve created fortunes to fill each cookie, it’s time to start making the batter.  You’ll need the following ingredients to make your cookies.

 

Ingredients:

 

3 eggs

2 tablespoons water

1/2 cup confectioner’s sugar

1/2 cup flour

1/2 teaspoon lemon extract

 

Steps:

 

Once you’ve gathered the ingredients, place the eggs in a medium bowl with the water and beat with the mixer for about 2 minutes.  Add the sugar and beat for another 10 minutes.  Now, add flour gradually and fold it into the batter.  Add the extract and you’re ready to bake your cookies.

 

Using a non-stick griddle on medium heat, drop about 2 tablespoons of batter into the pan and make into a small pancake shape about 5-6 inches across.  Cook for one minute and then flip, cooking for another minute. 

 

Before it cools entirely, place a fortune in the cookie and fold into the fortune cookie shape using rubber-ended tongs or heat-resistant oven gloves.  After they cool and set for several hours, they’re ready to go!

 

These are great to decorate the table with, or to use as a small dessert to send your guests home with.  Allow everyone to read their fortunes, and laugh at the possibility of them coming true!
