How to Make Black Bean and Toasted Corn Tacos

If you’re looking for a great vegetarian food dinner option, black bean and toasted corn tacos are an excellent choice.  This vegetarian dish is simple, easy, and tastes incredible.

To make this vegetarian dish, you’ll need:

 

1 cup of cooked black beans

Half a cup of salsa

2 cloves of minced garlic

2 and a half teaspoons of cumin, divided

1 cup of frozen corn kernels, thawed

1 teaspoon of ground black pepper

4 six-inch corn tortillas

12 baby spinach leaves

A half cup of roasted red pepper strips

A quarter cup of chopped cilantro

2 small green onions

A quarter cup of crumbled cotija


Steps:

 

To begin preparing this vegetarian meal, bring the beans, garlic, salsa and one teaspoon of cumin to a simmer in a pot.  Reduce the heat to low.  Simmer for about five minutes.  Remove from heat and mash the beans into a paste.

 

Next, heat a skillet over medium high heat.  Coat the skillet with oil, and wrap the corn in a paper towel to remove excess water.  Add the corn to the pan and then add the last teaspoon of cumin.  Next, add the black pepper.  Cook your vegetarian taco mix for five to 10 minutes, or until toasted.

 

Toast the tortillas for your vegetarian tacos in the oven (at 350 degrees).  When your tacos are toasted, fill each with a quarter cup of both beans and corn, and then top with the spinach and other vegetarian toppings.
