How to Make a Smoked Portobello Club Sandwich

The sandwich is one of the most versatile foods on the planet, and it also happens to be convenient.  For the vegetarian, a smoked Portobello club sandwich is a great treat for lunch.  It is easy to make, and is a healthy vegetarian option.

To make this vegetarian sandwich, you need to have a stovetop smoker, and one and a half tablespoons of wood chips (choose apple or hickory).  


You will need:

 

2 tablespoons of olive oil

1 tablespoon of lemon juice

1 cup of finely shredded lettuce

1 thinly sliced plum tomato

One-fourth cup of crumbled goat cheese.  You can also use feta. 

2 large Portobello mushroom caps.  Make sure that you remove the stem and the gills of the mushroom. 

Bread slices: six slices of thin white or wheat is great for this vegetarian delight!

 

Steps:

 

First, prepare your stovetop smoker with your wood chips.  Use a whisk to mix the lemon juice and oil.  Use this mixture to brush onto both sides of the mushroom caps.  You will want to smoke these for about 25 minutes.  While they are cooling, start toasting the bread.
 
Take the cheese and the remaining oil mixture, and mix them together.  Slice the mushroom cap thinly and place it on the bread; add tomato and another slice of the toast.  Add the lettuce mixture, and then another slice of bread.  Cut and serve your vegetarian sandwiches!

As long as you have a stovetop smoker, you will be able to make these vegetarian sandwiches with no trouble at all.  It’s a great meal, vegetarian or not!
