How to Make a Pina Colada

Ask any bartender to make you a pina colada and you’ll probably be met with a roll of the eyes or a pained expression.  Judging by your bartender’s reaction, you’ve just asked him to make the world’s most complicated drink, and he’ll probably want a big tip for making you one. 

 

But the typical pina colada is not complicated at all; in fact, you can easily make it at home to enjoy on a warm summer’s night – and no need to tip the bartender.

 

Here’s what you’ll need:

 

250 ml (9 fl oz) coconut cream

250 ml (9 fl oz) dark or white rum

375 (13 fl oz) pineapple juice

5 ice cubes

Steps:

 

Mix together the coconut cream, rum and pineapple juice in a cocktail shaker or a blender for 30 seconds.

 

Crush the ice in a blender.  Add to the mixture and stir well before pouring carefully into tall glasses.  

 

Decorate each glass with a slice of pineapple and a flower.  Voila!  Your pina colada is ready to serve.


Serving Suggestion:

 

For a hint of sophistication, serve in sugar-rimmed glasses.  To make these, simply take two saucers, and fill one with cold water, the other with white castor (fine grain) sugar.  Dip the rim of each glass first in the water, then in the sugar.  Allow to dry for approx one hour.  (NOTE: the sugar-paste formed by doing this may be hard to remove from the glass.  This is not recommended for fine or gold-leafed glasswear).
