How to Make the Perfect Scrambled Eggs

Everyone loves eggs for breakfast.  Nearly everyone has made them at home or eaten them at a breakfast cafe.  But hardly anyone knows how to properly cook scrambled eggs.  The rule for making the best scrambled eggs is analogous to a bad relationship: on and off again.

 

You will need:

 

Eggs

Frying pan

Seasonings

 

Optional:

 

Grated cheese

Ham or bacon

 

Steps:

 

Step 1: Crack two or three eggs into a flat pan. You do not have to break the yolks yet.

 

Step 2: Turn heat to medium.

 

Step 3: As the pan heats, you will see the bottoms of the eggs start to firm, turning white.

 

Step 4: At this point, take the pan off the heat and stir gently, mixing up the cooked bottom and uncooked top portion.  I like to use a soft spatula but you can you a fork or spoon if you like.

 

Step 5: Return pan to heat for a few seconds until the bottom starts to firm again.

 

Step 6: Take pan off heat and stir.

 

Step 7: Repeat Steps 4-6 until you have a nice consistency.  Depending on how many eggs you are cooking, I usually take the pan off and on the heat 5-15 times.

 

Step 8: Season to taste.  I find that some salt and sharp cheddar cheese on top really adds a nice flavor.  Add some ham or bacon and cheese for a great tasting eggs. 
 
**Make sure not to overcook the eggs or they will become rubbery.  A good rule of thumb to tell when the eggs are finished is to take them off the heat when they are still slightly runny.  They will continue to cook even after you take the pan off the heat.
