How to Make Blueberry Pancakes

Everyone should know how to make pancakes from scratch. However, knowing how to make perfect blueberry pancakes is the mark of a true breakfast chef. If you’re cooking for yourself or a loved one, blueberry pancakes will guarantee you will have a good day.

 

Below is one of my favorite recipes. Follow it and you will have the fluffiest, tastiest blueberry pancakes you’ve had outside of your local Pancake House!

 

Blueberry Pancakes Ingredients:

 

1 ½ Cup flour

2 Teaspoon baking Powder

1 Tablespoon granulated Sugar

1 Egg

1 Cup milk

½ Cup blueberries (frozen or fresh)

1 teaspoon vanilla extract (optional)

1 Tablespoon oil/Butter (for pan)

Blueberry Pancakes Directions:

 

Step 1: Mix the flour, baking powder, and sugar. 

 

Step 2: Using a separate bowl, mix the egg, milk, vanilla. Add the flour mixture to this liquid one and mix.

 

Step 3: Fold in the blueberries.

 

Step 4: Let batter sit for at least 1 hour.

 

Step 5: Heat pan to medium. Add a little oil or butter.

 

Step 6: Pour a generous amount of batter onto the pan.

 

Step 7: Cook until you see bubbles start to form. This tells you it’s time to flip!

 

Step 8: The bottom should be a nice golden brown. If it’s black, you’re heat is too high and you need to lower it. If the batter is still gooey after 5 minutes, turn the heat up.

 

Step 9: Cook the other side for 2-5 minutes until golden brown.

 

Make sure the middle isn’t gooey. If so, leave the pancakes in the pan for a minute or so longer.  I like to serve my blueberry pancakes with a pat of butter and warm syrup. You can add extras like bananas and strawberries to liven it up, but they are good by themselves.

 

When you let the mixture sit, the baking powder does it work and makes the batter fluffy. This makes large, light pancakes with amazing texture. So go out and impress your friends!
