How to Make Mexican Style Potato Soup

Are you looking for a hearty, filling soup this winter?  If so, then Mexican style potato soup is just the ticket!  This soup can be made very easily in your slow cooker and will make your home smell scrumptious, enough to leave your mouth watering until it’s ready!

 

Ingredients

 

7 large potatoes

5 tablespoons of cilantro 

1/3 cup of sliced onion

2 cups of chicken broth

8 cups of water

The juice of half a lime

Lime zest

Salt and pepper

Chili powder (1/4 teaspoon)

1/4 teaspoon of cumin

3 cloves of garlic

2 tablespoons of butter

1/2 cup of green pepper

1 cup of dried bean soup mix

 

Steps

 

To make this very easy soup, you will need to wash all of your veggies and cut them into smaller pieces.  Leave the skins on. 

 

Next, add them to the slow cooker.  Add your water and the rest of your ingredients to the slow cooker.  Cook your soup on high for about two and a half hours, or until the vegetables in the soup are tender. 

 

Now, use a hand mixer to blend the soup until it is smooth.  Continue cooking your soup until the flavors have blended (to taste).

 

Time to Eat!

 

Top your soup with fresh cilantro, shredded cheese or hot peppers and serve.  You’ve just made this hearty, filling soup right at home without any fuss or trouble.  The leftovers can be refrigerated for several days and still taste great. 

 

As a note, this soup recipe will yield 14 servings of soup, so eat up, because it’s better than anything you’ll get at nearby Mexican restaurants!
