How to Make Delicious Banana Pancakes From Scratch

One of my favorite songs is Banana Pancakes by Jack Johnson.  If you’ve heard it, you know that banana pancakes are a warm, fun, and delicious comfort food.  If you are having a lazy day and want to enjoy some great treats for breakfast without having to drive to the Pancake House, try this easy recipe for banana pancakes.

 

Ingredients:

 

2 Bananas

1 Cup Flour

2 Tablespoons Granulated Sugar

1 Cup Whole Milk/Cream

2 eggs

2 teaspoons Baking Powder

1 teaspoon Vanilla Extract

Oil/Butter for pan (1 Tablespoon)

 

Directions:

 

Step 1: Mix your eggs, milk, and vanilla extract.

 

Step 2: Stir in the flour and sugar.  Next add your baking powder.

 

Step 3: Mash your bananas first then mix them into the batter.  You can mash the bananas with a fork, or if you don’t like the mess, put them in a Ziplock bag to mash.

 

Step 4: Heat a pan on medium. Add a little oil or butter.

 

Step 5: Pour batter into the pan.

 

Step 6: After a couple minutes, bubbles will start to form on the top of the batter.  This tells you it’s ready to flip!  The bottom should be golden brown.  If it’s black, turn the heat lower.  If your pancakes are still soggy after 5 minutes, or the bottom is a translucent pale color, turn up the heat a bit.

 

Step 7: After 2-5 minutes, your pancake should be done!  Both sides should now me golden brown.  The inside should be fluffy, not chewy.

 

Serving Suggestion:

 

After cooking the pancakes, I like to serve it with sliced bananas and warm maple syrup on top.  Some powdered sugar goes great with banana pancakes too!
