A Delicious And Easy Spanish Rice Recipe

As easy as cooking Spanish rice sounds, there are a few tips to make sure that you do it right, every time.  Cooking with instant rice is not always preferred, but you can make most recipes work with instant rice if you just don’t have time for cooking rice from scratch.  This recipe is fantastic for families, because you will end up cooking Spanish rice that is so flavorful, even the kids will enjoy it.

 

Before you begin cooking, make sure that you have all of the ingredients.  For cooking Spanish rice, you will need two tablespoons of olive oil; one onion, finely chopped; one garlic clove, minced; two cups of medium or long-grain white rice; three cups of chicken stock, or vegetable stock if you are a vegetarian; one heaping tablespoon of tomato paste, or one cup of diced fresh or cooked tomatoes, strained; a pinch of oregano; and one teaspoon of salt.

 

Brown the rice in a large skillet with olive oil.  You should be cooking over medium-high heat.  Next, add the onion and garlic to the cooking mixture.  Cook for four minutes, stirring occasionally until the onions are softened.

 

In a separate saucepan, bring the chicken or vegetable stock to a simmer. Add the tomato sauce, oregano, and salt.  As the mixture is simmering, add the fried rice mixture to the broth. Bring to a simmer and then cover.  Lower the heat, and then continue cooking for fifteen to twenty-five minutes.  Make sure you let it stand for at least five minutes after cooking before serving.

 

For added color and interest, you can add in any of the following vegetables to the broth: fresh or frozen peas, chopped green and red peppers, mushrooms, zucchini. Cooked chicken pieces added to the skillet at the frying stage will make this into a more hearty dinner.
