The Perfect Winter Chicken Hotpot Recipe

When you want a great comfort dish for your family, there are few choices as great as chicken hotpot on a cold winter’s day.  There is something very comforting about chicken, and this recipe is sure to delight.  When you want the perfect dish for your next family meal, give this one a try.

 

To make this chicken hotpot, you will need:

 

4 large leg and thigh chicken portions
1 ounce seasoned flour
2 ounces butter
1 ½ lbs tiny new potatoes
1 crushed clove garlic
12 peeled baby onions
4 slices diced bacon
4 sliced celery stalks
4 ounces button mushrooms
Salt and pepper to taste
1 pint chicken stock
1 tsp dried herbs
1 tsp paprika
1 bay leaf
Chopped parsley to garnish

 

To start this chicken hotpot recipe, preheat your oven to 350.  Put your chicken into the flour to coat it, then melt the butter in a frying pan and brown the chicken until it is a nice golden color.  Put the chicken into a casserole dish and add in your potatoes. 

 

In the pan you used for the chicken, cook your garlic, bacon, celery, mushrooms, and onions.  Add in the remaining flour and stir, slowly stirring in the stock until it is thickened.  Add in your herbs and paprika and pour the mixture over your chicken.  Add the bay leaf, cover, and cook for one to one and a half hours or until the chicken is tender.  Remove the bay leaf, garnish with parsley, and serve.
