Making Turkey Chili With Holiday Leftovers

Was your holiday turkey bigger than the family could possibly finish in one sitting, yet the idea of eating it for the next three days makes you feel a little unwell?  Here is a great recipe for turkey chili that will have your mouth watering.  With this turkey chili, you can give that leftover bird a whole new flavor.

To make the turkey chili, you will need two cups of chopped onions, four chopped garlic cloves, a chopped green pepper, ¼ cup of olive oil, to cans each of stewed tomatoes and kidney beans and 2 tablespoons of tomato paste.  You will also need ¾ cup of turkey stock, 2 tablespoons of chili powder, a tablespoon each of cumin and red pepper flakes, a teaspoon of oregano, salt and pepper to taste, and of course, about four cups of leftover turkey.

To start the chili, simply cook the onions and peppers in a pot in olive oil for about five minutes and then add the garlic, cumin, and red pepper flakes.  When this is done, add in the tomatoes, beans, stock, tomato paste, and oregano as well as your turkey.  Bring it to a simmer and then drop the heat down to low, simmering for one hour. 

 

When the turkey chili is done, simply salt and pepper to taste.  You can even use a little bit of sugar to cut down the acidity if needed.

Turkey chili is a delicious dish, and this will certainly help you finish the bird without meaning eating plain turkey for the next week.
