Finding ways to finish that leftover Thanksgiving turkey can take days.  However, with this simple, easy recipe, you can enjoy turkey in a new way.  Turkey and wild rice casserole uses up your Thanksgiving turkey in a new way that is both simple to make and great tasting.

To make this Thanksgiving leftover meal, you will need a cup of wild rice, as well as two cups of cooked turkey.  In addition, you need to visit the supermarket and grab a half pound of mushrooms, sliced up, as well as one and a half cups of cream, two and a half cups of chicken stock, two tablespoons of chopped onions, half a cup of grated cheddar cheese, and a tablespoon of butter.

To make this simple meal using Thanksgiving leftovers, just wash the wild rice in warm water, then soak it in cold water for an hour.  Drain your rice and add it to a large bowl with your turkey, your mushrooms, one and a half cups of chicken stock, onion and your cream.  Pour this mixture into a buttered casserole dish and bake at three hundred and fifty degrees for about an hour.

Once the timer goes off on your Thanksgiving leftover meal, you need to add the remaining chicken stock and cook for another twenty-five minutes.  Sprinkle shredded cheddar cheese over the top and reduce the heat to three hundred degrees.  Leave it in the oven for another twenty minutes.  Serve this meal hot, with your choice of sides.

This is a great way to use up your leftover Thanksgiving turkey, while enjoying the texture and flavor of wild rice and cheese.
