Turkey Salad a Great Way to Use Up Thanksgiving Leftovers

It’s no secret that Thanksgiving leftovers can have a way of hanging around forever.  However, there’s no need to let that Thanksgiving turkey go to waste – you can make turkey salad and enjoy some great sandwiches if you like, using this easy recipe.

 

Making turkey salad from your Thanksgiving leftovers is not particularly hard.  All you really need is two hard boiled eggs, half a cup of mayonnaise, some chopped celery, your leftover turkey, half a cup of sliced green onion and two tablespoons of sweet pickle relish.

 

In a large bowl, combine all of your ingredients and mix together well.  Cover this mixture with plastic wrap and store it in your refrigerator for at least an hour.  However, if you store your Thanksgiving turkey salad over night, the flavors will be better. All you have left to do now is spread your turkey salad on some sliced crusty bread and enjoy it

 

If you prefer, you can omit or add different ingredients to your Thanksgiving turkey salad.  For instance, you might prefer to add a bit of lemon juice.  You might prefer to leave out the onion, or to use eggbeaters rather than regular hard boiled eggs.  The possible combinations are endless.  You can also use light mayonnaise to create a healthier Thanksgiving leftover treat.
