Healthy Recipes: Chicken Orzo Will Help You Lose Weight and Keep it Off

Ingredients for Chicken Orzo with Gorgonzola.

1 ½ pounds boneless, skinless chicken breasts halves,

1 large onion chopped,

14 ½ ounces chicken broth,

1 ½ cups uncooked orzo pasta,

¾ teaspoon Italian seasoning,

½ teaspoon lemon pepper,

1/3 cup crumbled Gorgonzola cheese,

¼ cup pine nuts.

Directions for Chicken Orzo with Gorgonzola 

For healthy recipes, you should always remove all of the fat from the chicken.  Cut the chicken into half inch strips.  Cooking spray rather than oil is highly recommended.  Spray a 10 inch skillet with cooking spray and heat over medium heat.  Cook the chicken in the skillet until it is browned on each side, about 2 minutes.  Remove the chicken from the skillet and set it aside.  Spray the skillet with more cooking spray, and cook the onion until it is tender, stirring to prevent scorching, for about 4 minutes.  Stir in the chicken broth, pasta, seasoning, lemon pepper and chicken.  Heat it to boiling, then reduce the heat to low.  Simmer uncovered for eleven minutes.  Stir occasionally until the pasta is al dente.  Remove from heat.  Stir in the Gorgonzola cheese, and sprinkle the pine nuts across the top of the finished dish. 

To add color and nutrients, add the following vegetables to the pan and simmer until tender:

Red and yellow peppers, strip-cut

Button Mushrooms

Zucchini, strip-cut or sliced
