How to Make Spicy Black Bean Soup

There are many different soup options that can make great winter treats, so skip your favorite restaurant and cook at home tonight.  One of the best winter warmers is spicy black bean soup, and you’ll find that making this soup at home is simple and extremely tasty.  To get started, you’ll first need to assemble your ingredients.

 

Ingredients:

 

2 tablespoons of olive oil

1 medium onion (chopped)

1 red bell pepper (chopped with ribs and seeds removed)

1 jalapeno (chopped)

2 cloves of garlic (minced)

3 cans of black beans

1/4 cup of chicken broth

1/3 of a cup of dry sherry

Salt and pepper

Salsa

Cilantro

Sour Cream

 

Steps:

 

First, heat the oil on medium and sauté the onion, jalapeno and bell pepper.  Now, add the garlic to the soup mix and stir. 

 

To make your soup, you now need to add the beans and chicken broth and bring it to a simmer. Reduce your heat to medium-low and cover most of the pot.  Let the soup continue to simmer for a half hour.  Add the sherry during the last five minutes.

 

Next, you need to transfer the soup to a blender (in small batches if necessary) and blend until it is smooth.  Using a small hand blender will let you mix your soup on the stove. 

 

Once the soup is smooth, you’re done.  Serve your soup topped with salsa, sour cream and cilantro, or keep the toppings in a bowl on the side.

 

For a tasty side, bake a few tortilla tips, sprinkled with olive oil and sea salt, for a great alternative to store-bought tortilla chips.
