How to Make Vegetarian Cabbage Calzones

Are you looking for a healthy vegetarian food option?  If so, a vegetarian cabbage calzone might be just the ticket!  These are tasty treats, but they are also healthy and made without any meat.  To make vegetarian cabbage calzones, you will first need to have some ingredients assembled.

 

You will need:

 

4 ounces of small red potatoes cut up into half-inch pieces

2 cups of green cabbage sliced into half-inch strips

1 tablespoon of olive oil

1 cup of finely diced onion

4 cloves of minced garlic

1 and a half teaspoons of oregano

A fifteen-ounce can of chopped tomatoes

8 pitted kalamata olives, chopped

2 teaspoons of red wine vinegar

3 hardboiled eggs, sliced

3 tablespoons of chopped fresh parsley

A16-ounce package of pizza dough

 

Steps:

 

First, bring a pot of water to a boil and add your potatoes.  Cook for about eight minutes.  Remove the potatoes and add the cabbage.  Cook this for three minutes.  Heat the olive oil in a pan and add the garlic, onion and oregano, and saute briefly.  Add the tomatoes and simmer for five minutes.

The next step in this vegetarian meal is to add the rest of the ingredients to the pan.  After it is heated, turn off the heat and add the eggs and parsley, potatoes and cabbage. 

 

Divide your vegetarian calzone dough into eight circles and place them on a greased oven pan.  Preheat the oven to 425 degrees.  Place a half-cup of the mixture on the bottom portion of each circle, then place the top on and crimp the edges.  Cut three slits in the top of each vegetarian calzone and bake for approximately twenty minutes.
