Turn Those Holiday Leftovers Into Turkey Parmesan

One of the things most people look forward to about the holidays is having a fridge full of tasty leftovers – until they find themselves eating cold turkey sandwiches at work for the seventh day straight.  Are you wondering what you can do with that turkey to make it appealing again? 

 

Turkey Parmesan can be an excellent choice to use up those holiday leftovers.  You will find that turkey Parmesan is incredibly delicious, but even better, it could not be easier to make.

To make turkey Parmesan as a sandwich, all you need is three ounces of sliced turkey, a tablespoon of diced onion, an ounce of mayo, and an ounce of Parmesan cheese.  Simply add the ingredients together and spread them evenly over toasted French bread.  Heat the oven to 400 degrees and bake the bread with the turkey Parmesan on top until it is slightly brown.  Sprinkle with chives as a garnish if desired and serve.

Of course, there are also many variations of this.  Instead of bread, some people enjoy turkey Parmesan with pasta.  Making this same mixture and adding in a favorite pasta sauce, such as Alfredo, can be great served over a bed of noodles.  Add fresh Parmesan to taste. 

Turkey Parmesan is definitely a very versatile dish, and it seems that everyone has their favorite way to enjoy it.  When you want a meal that is easy to make, but isn’t just another heaping plate of holiday leftovers, this recipe is a surefire hit.  Great for one or for the entire family, there is just something great about a dish that is simple to make and delicious as well after the stress of holiday cooking.
