Every woman, family CEO or career woman, needs an easy recipe for cooking a quick and delicious steak. This easy recipe is for Steak Diane, which you may think of as a restaurant dish, but which is actually an easy recipe you can make at home.
Begin this easy recipe with 4 center cut beef tenderloin medallions, 3 ounces each. Trim off all fat and pound until ½ thick. Chill the steak in the fridge to ‘set’ it. Sauté 1 tablespoon butter in 8 to 10 inch pan over medium heat for 1 minute. Add the steaks and sauté over a medium heat. Sprinkle with salt and pepper. Increase heat to medium high. Sauté no more than 2 minutes on each side, then remove from heat.
Place steaks on plate and cool in refrigerator for 5 minutes. While they are cooling, heat a 12 inch sauté pan over medium heat 1 minute. Add 1 ½ ounces clarified butter to pan with 1 teaspoon Worcestershire sauce. Put 2 tablespoons shallots chopped fine, 1/8 teaspoon minced garlic, and ¼ mushroom caps sliced 1/8 inch thick.
Place steaks around edges of pan. Stir mushroom mixture to keep it from boiling. After 2 minutes of sautéing, add in 1 tablespoon freshly squeezed lemon juice (not from concentrate). Season all ingredients with salt and freshly ground black pepper. Turn steaks over and add ½ teaspoon thyme, 1 teaspoon dry mustard powder, 1 tablespoon dried parsley.
Cook the steaks until they are nearly done (cooking time will depend on weight and thickness). Pour 2 ounces heavy cream into pan and add 1 tablespoon chives. Tilt pan and add 1 ounce brandy for a flaming finish to this easy recipe. Turn heat on high and light brandy with a match. Swirl, turn off heat and allow flame to go out.
