How to Make Great Breakfast Chilaquiles

Let’s face it, Cheerios and toast can become really old really fast when you eat them every single morning.  When looking for inspiration for your breakfast meal, it’s great to consider a little Mexican food for your first meal of the day.  This recipe for breakfast chilaquiles is certain to get everyone in your household excited about breakfast again, and it is surprisingly simple to make.

 

You will need:

 

All you will need is a couple of corn tortillas per person, two eggs per person, a jar of salsa, some ground beef, a few diced onions and peppers, chopped black olives, refried beans, grated cheddar cheese, two tablespoons of olive oil, and half a cup of vegetable oil, and you are ready to make the ultimate breakfast.


Steps:

 

Start by slicing all of your breakfast tortillas into one inch strips.  Heat the vegetable oil in your skillet until it is ready to fry, and then fry your tortilla strips over medium-high heat until they are just crispy. 

 

Now, heat the olive oil over medium heat and throw in your peppers, olives, and onions and cook until soft.  Add in your meat and stir well until browned.  Cook until the breakfast mixture is warm throughout an no specks of pink are left in the meat.

 

When this is done, add in your tortilla strips and then add in enough salsa to get the entire breakfast dish moist.  Heat the refried beans on a separate burner while the breakfast chilaquiles are cooking.  On a third burner, cook the eggs in whatever manner each family member wants.  Scrambled eggs are most popular for breakfast chilaquiles. 


Serving Method:

 

Once everything is ready, spoon the beans onto each plate, top with the breakfast chilaquiles and add the eggs.  Sprinkle cheese, or any other desired toppings, onto the dish.  Presto –  your breakfast chilaquiles are ready to be enjoyed!
