How to Make Chargrilled Veggie Kebabs

Barbeque season is just around the corner, and if you’re a vegetarian (or just love veggies!) you’ll love this great recipe for Chargrilled Veggie Kebabs.  This is one of the easiest and tastiest BBQ vegetable recipes you can find.

 

To make Chargrilled Veggie Kebabs, you will need:

 

3 peppers – 1 green, 1 red, 1 orange (de-seeded and cut into thick wedges)

1 large courgette (topped and tailed, cut into slices)

2 red onions (cut into wedges)

10 large mushroom, halved

Pack of baby (miniature) tomatoes

3 tablespoons quality balsamic vinegar

4 tablespoons olive oil

Firm mozzarella cheese, cut into large cubes

Packet of metal skewers


Steps:

 

To begin, put all of the vegetables into a large mixing bowl.  Pour the olive oil and the vinegar in, and toss the vegetables with serving tongs to coat all of the pieces.

 

Next, thread the vegetables onto the skewers, adding a cube of mozzarella every five pieces.  Use the red onion pieces as separators between the dark and the light colored veggies.

 

Now cook the skewers on the barbeque or under a preheated medium grill for about 10 minutes, until tender and lightly charred.  The cheese will melt and coat the adjoining vegetables, so be sure to add a drip tray if you’re cooking in your oven.


Serving Suggestion:

 

To serve, present on a bed of white rice on the skewer, or slide the veggies off the skewer and put into a serving bowl for a great party snack. 

 

TIP:  For a different texture and taste, brush your veggie skewers with BBQ sauce about three minutes before the end of the cooking time.
